The Banana Nut cookie is pure cozy nostalgia in every bite. Made with real bananas and hearty walnuts, this cookie captures everything you love about banana bread but in soft-baked, hand-held form. Picture a slightly golden edge, a plush, tender center, and little pockets of nutty crunch that make every bite feel like an afternoon at home.
These warm cookies are perfect for weekend brunch, book club sweets, tucking one into a lunchbox for a sweet surprise, or pair with a steaming mug of coffee for a quiet mid-day treat. They’re also a thoughtful gift to send someone who needs a little pick-me-up.
Warm, comforting, and impossible to resist. Happy baking!
Ingredients:
-
1 cup (2 sticks) salted butter, softened
-
1 cup granulated white sugar
-
1/2 cup firmly packed light brown sugar
-
2 large eggs
-
2 teaspoons pure vanilla extract
-
1 1/2 teaspoons salt
-
1/2 teaspoon baking soda
-
2 1/3 cups all-purpose flour
-
1 whole yellow banana
-
1 1/2 cups chopped walnuts
Bake at 375°F for 9-11 minutes.
Instructions:
-
Preheat the oven to 375°F.
-
In a large mixing bowl, cream the butter and sugars together using a hand/electric mixer on medium speed until the mixture is smooth. Add eggs, vanilla, salt, and baking soda to the butter mixture. Mix on medium speed until the ingredients are incorporated and smooth. Add flour. Mix on low speed until flour is no longer loose, then on medium speed until fully incorporated.
-
Peel and mash 1 whole banana with potato masher. Add mashed banana and chopped walnuts to the dough and mix on low speed until mixed evenly.
-
Line a cookie sheet with parchment paper. Using a medium-size cookie scooper, scoop cookie dough (2 tablespoons) onto a parchment-lined cookie sheet at least 2 inches apart.
-
Bake for 10 to 12 minutes, until the edges are browned and set.
-
Slide the parchment paper with cookies off of the cookie sheet, directly onto the counter for cooling. (If not using parchment paper, let the cookies sit for 1 minute and then remove to cool on the counter or wire rack.)
